Hi, I’m Sariah Nock, MS.
My mission is simple: to help you find answers faster than I did and give you the confidence to thrive with celiac disease.
My journey into clinical nutrition began long before I ever stepped into a classroom. I grew up experiencing food scarcity and malnutrition, and even as a collegiate athlete, I didn’t have access to the nutrition education I needed. I learned early that food is powerful—not just for performance, but for health, healing, and quality of life.
Then, in 2018, my own health journey changed everything.
I was diagnosed with celiac disease, and what followed was years of appointments with gastroenterologists, endocrinologists, and other specialists, along with extensive lab testing in search of answers. I experienced firsthand how overwhelming it can be to navigate a complex diagnosis without the right support.
Finding a knowledgeable nutrition professional became a turning point for me. For the first time, I began to understand how personalized nutrition could play a meaningful role in my health and quality of life. That experience showed me just how powerful the right guidance can be—and ultimately inspired me to become the kind of resource I had needed.
When I became a mother in 2020, that purpose became even more personal.
Having grown up with food scarcity, I wanted to create a different relationship with food for my children—one rooted in nourishment, knowledge, and confidence rather than fear or uncertainty. I wanted to understand nutrition deeply enough to give my family the foundation I never had.
So, in 2024, while raising my three children, I returned to school to pursue my Master’s in Clinical Nutrition. I graduated magna cum laude from Sonoran University of Health Sciences, and becoming a clinical nutritionist remains one of the best decisions I’ve ever made.
Today, I combine my personal experience living with celiac disease with evidence-based clinical nutrition to help others navigate life after diagnosis.
Celiac disease may be centered around gluten, but caring for your health can involve so much more than simply removing gluten from your diet. I’m passionate about helping people understand the practical side of living gluten-free while also supporting overall nutrition, nutrient status, gut health, and long-term well-being.
My own transformation is what continues to fuel this work. As I learned to advocate for myself and prioritize my health, I found my energy, confidence, and spark again. I know what it feels like to be overwhelmed and searching for answers—and I know how empowering it can be to finally have the knowledge and support you need.
That’s why I created The Celiac Collective.
I want you to feel confident navigating food, restaurants, labels, nutrition, and your health—not constantly worried about getting something wrong.
You deserve more than simply learning how to avoid gluten.
You deserve to know how to thrive.
I’m so glad you’re here, and I would be honored to be part of your journey.
xx,
Sariah
